Oxalis tuberosa, commonly known as oca, is a miracle root crop from the Andes. The few times I’ve grown it, this year included, I planted the pink tubers in April, and found that the plants grow rather slowly over the summer, then take off in the cool weather of September and October. Visually, it is at it’s peak in November. Tuber formation is triggered by short days, which means it is harvested in late November and December at our latitude. I expect to write more about this plant in the coming years, as I feel it has a lot to offer to both the eye and the belly.
